Spicy Szechuan and Chinese dishes; it pairs especially well with ginger. Also great with semi sweet puddings, pâté and soft cheese
Aging
We fermented it slow and cold, and stopped the fermentation to retain plenty of
sweetness from the grapes.
Harvest
Harvested in November, the fruit was very ripe.
